I find that the mustard seed has a tendency to make the dressing too spicy.
4 slices bacon
¼ cup cider vinegar
2 tbsp olive or vegetable oil
1 tsp yellow mustard seeds (optional)
2 tsp minced parsley
1 tsp minced onion
1 tsp sugar
1 large bunch baby spinach

Cook bacon in a skillet over medium-high heat until crisp. Drain on paper towels, cool, and crumble.

Combine well. vinegar, oil, mustard seeds, parsley, onion and sugar.

Wash spinach well and place in a salad bowl.

Pour the dressing over the spinach and toss, Sprinkle with the crumbled bacon.
