Barbecued shrimp marinated in a lemon ginger marinade.

Yields1 Serving
 1 ½ lbs large shrimp, peeled and deveined with tails attached
 ¼ cup olive oil
 1 tsp sesame oil
 2 tbsp lemon juice
 ½ onion, chopped
 1 clove garlic, peeled
 1 tbsp grated fresh ginger root
 1 tbsp fresh cilantro leaves
 ½ tsp paprika
 ¼ tsp salt
 ¼ tsp ground black pepper

In a blender or food processor, combine olive oil, sesame oil, lemon juice, onion, garlic, ginger, cilantro, paprika, salt and pepper. Process until pureed. Pour into a medium sized mixing bowl.

Place shrimp into the marinade and cover with plastic wrap. Place in the refrigerator and let marinate for 2 hours.

Preheat an outdoor grill for medium heat and lightly oil grate.

Thread the shrimp on metal skewers or bamboo skewers that have been soaked in water.

Barbecue shrimp for about 5 minutes or until they turn pink all the way through. Turn and baste frequently with marinade.
