Heat 1/2 the apple cider with the salt, sugar and aromatics. Infuse for 20 minutes and remove from the heat.
Add the remaining apple juice and chill.
Add chicken breasts and cure over night.
Remove from brine and rinse. Place on a roasting sheet, rub with a dash of oil and bake until cooked (preheated 400°F oven for 20 minutes).
Meanwhile boil up the potatoes in slightly salted water. Remove from water and while warm, cut in half and add chopped green onions and enough "Just Un’dressing" to coat the potatoes.
Serve the chicken over the potatoes and finish with a drizzle of "Just Un’dressing".
