2 oz olive oil
2 tbsp butter
1 onion chopped
2 garlic cloves, chopped
1 cup tomatoes, peeled & chopped
½ cup bacon, chopped (I use pancetta)
6 oz heavy cream
4 oz red wine
2 oz vodka
2 tbsp Parmesan cheese
2 tbsp Romano cheese
½ tsp salt
1 pinch pepper
2 tbsp parsley

Heat oil and cook onion, garlic & bacon for 5 min. Add tomatoes then simmer for 10 min. All cream, wine, vodka, cheeses, salt & pepper and reduce over medium heat for several minutes. Toss with cooked rigatoni or penne and serve with parsley.
