Here's a great way to serve bacon, eggs and toast all in one dish. It makes a great brunch dish for company but is also good for weekday breakfasts because it can be assembled the night before and baked in the morning.
Remove crusts from bread and butter slices lightly. (Reserve crusts and grate for crumbs for another use). In bottom of 9-inch square baking pan, arrange some of the bread slices, buttered side down, covering as much of bottom and sides as possible. Sprinkle with bacon, most of cheese (reserve some for top) and green pepper. Top with remaining bread slices, buttered side up. Sprinkle with reserved cheese.
Combine eggs with milk and a pinch of nutmeg and pour over top. Refrigerate until ready to bake, at least 2 hours.
Bake in 350°F (180°C) oven for 40 to 50 minutes or until top is puffed and golden.
Makes 6 servings.
